Breaded in corn flakes, seasoned with a homemade ranch seasoning, baked and served with a creamy, sweet and sour honey mustard sauce.

INGREDIENTS


  • 2 pounds of boneless chicken fillets
  • 1 cup buttermilk
  • 2 cups finely ground corn flakes
  • 2 tablespoons whole wheat or all-purpose flour
  • 1 tablespoon dried chives
  • 1 tablespoon dried parsley
  • 2 teaspoons dried dill
  • 1 teaspoon garlic powder and onion
  • 1 teaspoon of cayenne pepper, or chipotle chili powder, use more or less to taste
  • 1 teaspoon fresh kosher salt black pepper
  • extra virgin olive oil for blow drying
  • chives or chopped fresh parsley, to serve


MUSTARD WITH HONEY


  • 1/4 cup Dijon mustard
  • 1/4 cup of honey

  • 1/4 cup of extra virgin olive oil
  • 1/2 lemon juice, plus quarters to serve
  • 1/4 teaspoon of cayenne pepper
  • kosher salt and black pepper
